Yep, there are potato chips on that sandwich in the photograph. And a generous spoonful of hot red pepper jelly. And even a smear of mayonnaise. This is a zucchini parm sandwich you probably won’t find at your local red sauce joint.
This recipe was adapted from Christina Tosi’s Milk Bar Life cookbook, which in itself was adapted from a sandwich served at the (now-closed) No. 7 Sub in New York.
I was immediately drawn to it because of its non-traditional fillings, especially the aforesaid potato chips, but it’s just as excellent if you want to use regular marinara sauce.
So excellent, in fact, that I’m recommending it here despite the fact that it involves breading and baking your own homemade zucchini strips.
