When you want quiche but don’t want to deal with a pie crust situation — whether homemade or store-bought — potatoes come to the rescue.
Divisive opinion: I’m not a frittata person. I always want my baked scrambled eggs to be wrapped up in some kind of carby blanket: pie dough, tortilla, toast, whatever. Don’t hand me a slab o’ baked egg and expect me to be happy.
And I’m always looking for a way to switch things up so I’m not eating the same exact meal every month. (Planning doesn’t have to mean eating the same five things unless you really want to!)
So a quiche using shredded potatoes in place of pie dough? Yes, that most certainly checks my boxes.
