One-Pot Kale Tortellini Stew
For the Instant Pot or the stovetop / for omnivores, vegetarians, or vegans
Vegetable stews and soups can often feel like a catch-all for whatever ingredients might be rolling around in the crisper drawer of the fridge: “Whoops, here’s a random zucchini, throw that in. How did I forget I had half a cabbage in here? Let’s simmer that into something.”
But if you give yourself some ground rules for what ingredients go into which stew, you won’t feel like you’re making the same thing over and over again.
I could add at least three other vegetables to this one, but I’m restricting myself to kale (lacinato or “dinosaur” kale is preferred here) and fresh fennel, along with the onion-garlic base and tomato broth.
Having said that, this is an incredibly versatile stew that can be made in both the Instant Pot and on the stovetop, and works for meat eaters, vegetarians, and vegans alike. I love using Impossible sausage in place of pork sausage here, but I’ve been known to nix it altogether and go strictly veggie.
